U.S.D.A. Grade A, Raw-Unprocessed Honey

  • Raw, unprocessed honey means it has been taken straight from the honeycomb. Thus, there will be small bits of honeycomb/beeswax, or even pollen.

  • What does this mean?

    • This means the honey is in its purest form. It is not heated, not pasteurized, and is raw. Honey in its best state when unprocessed.

  • What do the numbers on the honey jars mean? 

    • Each jar of honey has the hive number (Hive #62, Hive #87, Hive #85, etc.) from which it was extracted. This year three of the hives produced enough honey to extract. We only extract honey above the second box so that the colony will have what they need to "over-winter."

    • Hive #62 is a hive of Italian bees. These bees were quite the personality this year. Happy when getting their water in the very dry and hot summer, and not too happy when we were checking frames or adding frames.

    • Hive #87 is a hive of Carnolian bees. Carnolian bees are friendly and tend to swarm one to two times a year. No worries though - swarm is not like what it sounds to be. 

    • Hive #666 is a hive of Saskatraz bees. Saskatraz bees come from Canada, and were bred to be tolerant to the Pacific Northwest weather and be varroa mite resistant. True to form, they have done quite well. So well, that they produced the first summer honey we have ever harvested.

  • We are a true single-source apiary in that each hive has its own colony and queen that goes to specific pollen and nectar locations in the neighborhood.

  • When the honey is extracted, it is then filtered once to remove larger pieces of beeswax then packaged in glass jars. Yes. Glass jars are a bit more expensive but glass jars do not alter the taste of the honey as plastic containers sometimes do.
